A Bellini cocktail is a must for many thousands of visitors to Venice, who since 1948 have flocked to Harry’s Bar in Venice to sip on their speciality: a cocktail of sparkling white Prosecco and white peach puree. (And they’re in good company: Ernest Hemingway and Orson Welles were early habitués of this now world-famous bar, with its strangely low seats and tables that almost make you feel you’re at a doll’s tea party.)
